I wish people could lose weight eating, rather than gain.
This is one reason I love Chinese and Indian food because
it goes out almost as
fast as it goes in and you stay hungry. lol
I turned on the Rachel Ray Show and lo and behold......She
had on a Chinese cook. I noticed Rachel gained a few pounds
since she began this show. Must be all the tasting of all this good food.
I have a set of her pots and I love them Now I have to get one of her
ladles because they all have rubber handles and it makes a difference
when you cook.
Daddy Wu’s Chicken
- 2 pounds chicken breast, cut into 1-inch cubes
- For the marinade:
- 1 tablespoon soy sauce
- 2 tablespoon sake, xiao shing wine or dry sherry
- 1 teaspoon grated ginger
- 1 teaspoon grated garlic
- 2 tablespoons oyster sauce
- 1 teaspoon sesame oil
- 1 1/2 cups jasmine rice
- 3 cups cold water
- 3 eggs, lightly beaten
- 1 cup flour
- 1/4 cup cornstarch
Now I know the Colonel Sanders secret for his crispy chicken.

The chicken is marinated 4 to 18 hours and also can be made in
large batches and then separated into portions in zip lock bags and
frozen till needed. This was what Daddy Wu did in his Jade Restaurant.

The sauce they dip the cooked chicken in follows. There should
not be too much sauce or the crispness of the chicken disappears.

- For Daddy Wu’s Sweet and Sour Sauce:
- 2 tablespoons canola oil
- 1/2 red onion, sliced
- 1/2 cup cherry tomatoes, halved
- 1/2 cup ketchup
- 3 tablespoons brown sugar
- 1 teaspoon sake
- 1 teaspoon sesame oil
- 2 tablespoons oyster sauce
- 1/4 cup chicken broth
- 1/4 teaspoon ginger, grated
- Zest and juice of 1 lemon
- 3 scallions, cut on a bias
Add this chicken to a bed of rice and away you go.
Rachel said they tried it on the staff and it disappeared in minutes.
The rooster up top reminds me of my Cornelius.
He was a nice rooster and loved pats and watching tv and crowing non
stop from 3 in the morning.. Short of putting him to bed with you to stop
him from crowing, there was no place to hide him, that people wouldn't hear.

I know I certainly didn't gain weight in the year I spent in China. This chicken sounds delicious -- we'll have to give it a try.
I buy my sauce in bottles and get a good taste that way. I cannot be buying all those individual ingredients just for myself! I love crispy beef and wish I knew how to do it. I include crispy chicken with it. Crunchy outside and tender inside and flavored with tangy sauce from the bottle.

Lorna well they said to put 1 part corn starch to 3 parts flour if you want to fry.
But I love the BBQ'd meat with the bottle sauces as well.
It's easy to go over board with food and it smells so delicious
I wish we didn't have to eat or sleep. That would be a wonderful world for me. lol

Gattina - I agree. Drinking water is the best thing to do.But people have herding instincts and seeing some one chew makes you want to chew as well.
