Armenian Pizza Delight

Armenian Pizza. It’s delicious and healthy .

I find this fun to make with Pita Bread. I buy a big bag of pita bread and tear the breads in half to make the rounds thinner.

I make a paste of the meat ingredients and use a knife to spread it in a thin layer, on each sheet, like jam.

Then I have a choice of either placing each round between wax paper and freezing them in zip lock packets of 4, 6, or 8. (they go fast)

For future snacks

Or baking them in an oven on a flat tray in fours (unless you use smaller pita) for about 5 minutes because you just need the meat to cook and it doesn’t take long.

The ingredients are listed here in how to make it from scratch including the dough but you can make your own meat preparations according to taste.Its a perfect time to get your kids to eat foods they ordinarily refuse by grinding them into the meat mixture, ie tomatoes, parsley, spinach, etc.....

The main thing being everything has to be chopped or blended up fine so you can smooth it onto the bread like liver worst.

My family loves it and when I make it I can never make enough. This is great for pizza loving kids.

Lahmajun is often call the Pizza of Armenia and Middle East but without all the fattening ingredients of pizza



1 tablespoonful of dried yeast

½ teaspoon Sugar

1 ½ cup of Lukewarm water

3 cups of Flour

½ teaspoon Salt

3 tablespoonfuls Olive oil


For the topping

500 grams ground beef (or lamb)

¼ cup of Olive Oil

2 Onions finely chopped

1 clove of Garlic finely chopped

2 Tomatoes peeled, seeded, and blended

½ teaspoon of mild boukovo (Greek red chili flakes)

½ teaspoon sweet paprika

¼ teaspoon chili pepper

½ cup of Finely-chopped fresh parsley

Salt to taste

Freshly-ground black pepper to taste

For the top: Juice of 1 lemon


ELEPHANT STEW

Serves: about 380 people.

Preparation:

  1. Cut up Elephant into bite size pieces.(Takes about 2 Months)
  2. Add brown gravy to cover.
  3. Cook about four weeks at 465 degrees over a hot fire.

Special Note:

For larger groups,add 2 Rabbits, but only if necessary as most people don't like to find hare in their stew

Sorry wasn't able to visit with you in a long time. My wife is a jealous person and monitors my internet activities all the time. this stuff you put on looks good...wish I can eat some of this.
